Guilt-free Dessert: Roasted Peaches & Ice cream

As the seasons change, one of the things I’m most excited about is the food that comes with each one. For me, part of embracing the new season is eating according to the foods available, as well as the things that immediately remind you of spring or autumn. I mean ice cream in the winter is great too but what compares to the cooling effect of a tub of Haagen Dazs Vanilla or Pistachio flavoured greatness from your local Gelateria? Nothing. The answer is nothing.

The thing is, there’s no set rule for eating particular foods in season – I refuse to be anal about this, otherwise I wouldn’t be able to do other seemingly absurd things like eat cereal for dinner (anyone else?). But I guess some things are just more enjoyable at particular times – kind of like comfort food at winter shielding you from the ferocious cold. We have the opportunity to let our food & cooking reflect the seasons so why not?

With the summer season, not only does everything seem somewhat fresher, but we’re able to pick lighter foods that allow us not to feel bloated whilst trying to withstand the heat. As much as there seems to be an endless array of salads we can opt for, sometimes dessert can feel limited to gelato or a sorbet if we want a lighter option. But alas, it doesn’t need to be this way.

Peaches have somehow become my new favourite fruit and I am wildly obsessed. I have them roasted with French toast at one of my favourite brunch spots, or freshly cut up into wedges with my granola & yoghurt – but ultimate satisfaction comes with this incredibly simple recipe I am sharing with you right now.

Guilt free, simple, healthy (ish) and super tasty. I don’t think you need anymore convincing.

Top tips:

  1. Pick peaches that aren’t overly ripe for them to keep their shape while roasting.
  2. To kick things up a notch, roast some crumble topping and sprinkle over the dessert once served for extra crunch.
  3. During winter, you can sprinkle some cinnamon over the peaches to warm them up a tad so it’s more appropriate for blanket weather.

Guilt-Free Dessert: Roasted Peaches & Ice cream

Incredibly simple yet impressive summer dessert!

  • 3-5 Ripe Peaches (washed and halved with seeds removed)
  • 1 tbsp Granulated sugar
  • 1 handful Fresh Mint Leaves
  • Vanilla Ice cream
  • Honey
  1. Preheat oven to 200 degrees celsius

  2. Grease a baking sheet with some olive oil or butter

  3. Optional: Grill the peaches on medium to high heat on a ridged grill pan (drizzled with butter/olive oil) to get the chargrilled effect first. Press down on each side for approx. 2-4 minutes each.

  4. Place the peaches on the baking sheet – halved side up and sprinkle the granulated sugar & a drizzle of honey over them.

  5. Roast for about 20 minutes in the preheated oven until done. (This will depend on how ripe your peaches are.) Once you can easily pass a fork/knife through the peaches then they're ready!

  6. Serve with ice cream (dish with an ice cream scoop that has been dipped in hot water for a picturesque look) and some fresh mint. Drizzle honey over the top and enjoy!
